Ingredients

  • 2 apples
  • 1 ripe banana
  • 4 dates
  • Juice of 1/2 lemon
  • 1/2 teaspoon cinnamon

Instructions

  1. Core and peel the apples. Slice in quarters.
  2. Add the remainder of the ingredients to a blender and blend until smooth.
  3. Refrigerate before serving.
  4. Enjoy!

Paleo-Friendly Meals: Filipino Adobo Style Bok Choy

I absolutely love Filipino food – it’s so savory and delicious. When I was young, my Lola (grandma) watched me everyday and cooked chicken adobo at least once a week. The smells coming from the kitchen were intoxicating and drew me in – cartoon style, feet floating and nose following the visible aroma. I always look forward to chicken adobo over rice on the kitchen table. These days I’m avoiding rice but the flavors of Filipino adobo are so versatile they can be added to almost anything. In this case, I’ll share with you the wonders of Filipino adobo style bok choy!

Not-Even-Close-to-Paleo-Friendly Meals: Chocolate Pecan Pretzel Bites

There’s not much to this recipe at all. It’s more of a quick dessert/gift/project to make when you need sometime sweet and not even close to Paleo-friendly! Arrange them nicely on a platter or put them in clear gift bags with a pretty ribbon! It’s that easy! 006What you need:

  • Bag of square pretzels
  • A few rolls of Rolos
  • Bag of halved pecans
  • Baking Sheet
  • Oven

What you need to do:

  • Preheat your oven to 350 degrees
  • Arrange pretzels on a baking sheet
  • Place one Rolo on each pretzel
  • Bake for about 10 minutes, or until Rolos are soft and melty. Don’t leave them in the oven too long or they will turn into something mushy and scary.
  • Push a pecan into each Rolo
  • Let cool, then serve!

Why are you so delicious? There’s something so lovely about a giant bowl of spaghetti and meatballs that melts my heart in a special cheesy melty way. Despite your deliciousness, I know that you make me fat and lethargic – not to mention a stomach ache. You’re one of the first things I missed when I went Paleo. But I must admit, pasta m’dear, that I’ve found someone new. It’ll never be as delicious as you, but I know in the long run we’ll be much better together. It’s name? Oh, let’s not let this get ugly.
