Paleo-Friendly Meals: Fajita Burgers
I feel like I am forever cooking, especially on Sundays. I’m not complaining – because I love to cook and eat fresh food – but sometimes I exhaust myself looking for something new and yummy to cook. I’m pretty adventurous with my meals and don’t mind trying new things, but my mom is a different story. She’ll usually eat whatever I cook, but the following recipe is one of her favorites. It’s a dressed up version of a classic AND it’s Paleo-friendly. What more could you ask for? (more…)

Paleo-Friendly Meals: Fried Chicken
There’s something so comforting about fried chicken. Crunchy skin…hot out of the oil…smuthered in hot sauce…mmmm. I’ve tried multiple Paleo recipes with gluten-free breading, but it never tastes as good as the real thing. So why try to duplicate it when you can make the next best thing? This recipe is gluten-free, breading-free, quick, easy and CHEAP! Huzzah! Read on for the full recipe.

Happy Wednesday! Hopefully your week is going as well as mine! We are officially in the transition from fall to winter and the best remedy for chilly feet and cold hands is a decadent bowl of soup! I could eat soup all year round, but there is something so satisfying about curling up with a soft blanket and having soup from a fancy little bowl. This recipe is one of my new favorites. Not only is it Paleo friendly, but it is gluten-free and dairy-free! It’s quick and easy too! (more…)
Paleo-Friendly Meals: Antipasto Salad
***edit: I am so sorry everyone but I screwed up and accidentally deleted the pictures to this post. I am going to make this again in the future, and I promise to upload the step-by-step pictures again! Sorry!***
I don’t particularly love salad. I want something of substance that I don’t have to eat delicately with a fork and knife. Paleo Kings and Queens love to tout the BAS (big-ass salad) as an integral part of their diets. Are they full of veggies? Yes. Do they travel well? Yes. Are they easy to prepare? Of course. I still don’t love salad. See below for exhibit A:

Hello, hello. It’s good to be back. I know my posts have been inconsistent lately, but I am trying to make time to write here, even if it’s only a recipe or two. So today I give you a wonderful lunch idea – something quick and simple – something even a picky eater would love!
This is one of my favorite Paleo-friendly finds because its easy, inexpensive, and travels well. (more…)
