Happy Wednesday! Hopefully your week is going as well as mine! We are officially in the transition from fall to winter and the best remedy for chilly feet and cold hands is a decadent bowl of soup! I could eat soup all year round, but there is something so satisfying about curling up with a soft blanket and having soup from a fancy little bowl.This recipe is one of my new favorites. I don’t particularly love salad. I want something of substance that I don’t have to eat delicately with a fork and knife. Paleo Kings and Queens love to tout the BAS (big-ass salad) as an integral part of their diets. Are they full of veggies? Yes. Do they travel well? Yes. Are they easy to prepare? Of course. I still don’t love salad. See below for exhibit A:

Hello, hello. It’s good to be back. I know my posts have been inconsistent lately, but I am trying to make time to write here, even if it’s only a recipe or two. Paleo-Friendly Meals: Homemade Chicken Stock (AKA nothing goes to waste!)
Waste not want not, right? My last recipe called for a whole chicken which is not only cheaper, but incredibly easy to cook. Since I butterflied the chicken, I cut out the spine and set aside the “brown bag of scariness” to use later. So what to do with the extras? Toss? NO. Compost? Nah. Save them for chicken stock? GOT IT.
