Oh Disney World, I love you so. You house the most fantastic mother-daughter vacations EVER and that’s why we keep coming back every year – sometimes bi-yearly! – for more. Typically, my mother and I visit Orlando in January-February and/or August-September for our girls only trip(s). Paleo-Friendly Meals: Antipasto Salad

I don’t particularly love salad. I want something of substance that I don’t have to eat delicately with a fork and knife. Paleo Kings and Queens love to tout the BAS (big-ass salad) as an integral part of their diets. Are they full of veggies? Yes. Do they travel well? Yes. Are they easy to prepare? Of course. I still don’t love salad. See below for exhibit A:

Hello, hello. It’s good to be back. I know my posts have been inconsistent lately, but I am trying to make time to write here, even if it’s only a recipe or two. I miss having too much time on my hands. These days I’m always running, always tired, always late for something. So today I give you a wonderful lunch idea – something quick and simple – something even a picky eater would love!

Be Kind to Each Other.

Today’s post will be short and sweet. I’m not sure if you’ve seen or heard about this story, but it broke my heart. His twin sister is teased in school. He selflessly asks Santa to make his sister happy in exchange for his Christmas wish list. How many of you would do that?

My challenge for the day is to be kind to each other. Have gratitude. Show appreciation. Be nice. Pay a compliment. Practice Aloha. Please. Do it for this little girl. Do it for all the kids who are teased everyday, those who feel like they aren’t good enough, the ones who struggle with being different, those shunned from society, discriminated against, hated. Do it for yourself.
