I feel like I am forever cooking, especially on Sundays. I’m not complaining – because I love to cook and eat fresh food – but sometimes I exhaust myself looking for something new and yummy to cook. I’m pretty adventurous with my meals and don’t mind trying new things, but my mom is a different story. There’s something so comforting about fried chicken. Crunchy skin…hot out of the oil…smuthered in hot sauce…mmmm. I’ve tried multiple Paleo recipes with gluten-free breading, but it never tastes as good as the real thing. So why try to duplicate it when you can make the next best thing?
