Gather your no-waste ingredients: shrimp shells, celery trimmings, mushroom trimmings, onion, garlic, and carrots.
The flavor squad includes: bay leaf, dried thyme, black pepper, and parsley stems.

- 1-2 pounds of shrimp shells
- 5-6 cups of cold water
- 1 medium-large onion, chopped
- 3/4 cup carrots, chopped
- 3/4 cup celery, chopped
- 1 tablespoon garlic, chopped
- 1/2 cup mushroom trimmings
- 1 bay leaf
- 1/4 tablespoon dried thyme
- 1/4 tablespoon black pepper
- Handful parsley stems
